Job description
The Catering Department
The Catering department is run by the Head of Catering and Hospitality, supported by three line managers. The College does not have a centralised dining room and each boarding house runs its own kitchen which caters for about 70 boys and 10 members of staff. We employ nearly 30 Head Chefs and Chefs along with many Kitchen and Dining Room
Assistants. During the course of a day the Catering team produces nearly 2,500 meals all from scratch and from fresh ingredients!
In addition to this we also cater for many functions, both for internal and external clients. The Functions team is led by the Functions Manager, assisted by Supervisors and Stewards (Catering Assistants). The permanent team is supported when required by casual staff.
Responsibilities
The main duties and responsibilities are listed below, but this list is not exhaustive.
* The ordering and provisioning of the kitchen to ensure that there are sufficient food stocks to provide the daily meals; using only Bursary approved suppliers.
* Managing the preparation and cooking of healthy and satisfying meals that provide the optimum nutritional value for growing children. Menu plans are to be seasonal and varied from term to term to avoid repetition and maintain popularity.
* Costing of menus and working within the set food budget.
* Responsible for all aspects of food safety within the kitchen. He/she is the subject matter expert in food safety within the kitchen and ensures all staff compile with Food Safety Legislation and College Policy.
* Ensuring that all "Due Diligence" records are maintained and kept in good order. Adopt new policies as directed and keep up to date with new procedures.
* Undertaking general daily kitchen duties, including cleaning. The Head Chef will be required to 'muck in' when it comes to daily cleaning of the kitchen and supervise the regular deep cleaning.
* Ensure that all deliveries are checked for quality and quantity.
Managerial Responsibilities
The Head Chef is responsible for the direction and control of all staff employed within the kitchen environment, which will require guidance in kitchen matters. The domestic and/or casual staff also assist in the serving and clearing away of the meals which are taken on a 'family service' basis. In particular, the Head Chef must ensure that there is adequate cover to meet known commitments, including weekend duties.
Personal Qualities
In order to carry out his/her duties effectively, the position holder needs to be able to work flexibly and have a helpful and co-operative approach. Applicants are expected to be qualified to at least NVQ3 or equivalent but Winchester College may consider comparable kitchen experience for an exceptional candidate. The successful applicant will need:
* Basic Food Hygiene Qualification. (Training will be given if required)
* Previous catering experience in a Head Chef Role. (Preferred)
* Good communication skills, both written and verbal, and must be able to mix easily and lead a small team
Terms of Service
Hours of Work
An average of 40 hours will be worked over a two-week rota, exclusive of meal breaks. It is essential that the post holder be able to work flexibly across the working week, which will include working evenings and weekends to ensure standards across all meals. He/she will be expected to work 2 days at the beginning and end of each term to ensure ordering and set up of the kitchen ready for service.
Start Date
As soon as possible.
Salary
The starting salary will be circa GBP 19,265 (gross) per annum. This includes four weeks paid holiday. Salary levels are reviewed on 1 September annually, and this appointment will next be reviewed in 2020.
Holidays
The Head Chef is entitled pro rata to 4 weeks' holiday plus bank holidays per year. This entitlement is paid as part of the salary. Bank holidays that fall during term time are deemed normal working days. All holidays will be taken out of term time.
Probation and Notice Periods
The first four months of employment will be a probationary period. During this time conduct and performance will be reviewed. The College may extend the probationary period if it is deemed to be required. During the probationary period the notice required to terminate employment will be one week (by either the employee or employer). The notice will increase upon the successful completion of the probationary period.
Pension and Life Cover
After three months' employment, employees will be auto-enrolled into the College's pension scheme according to legislative thresholds. Those who are not eligible for auto-enrolment may still elect to join the College's pension scheme. Initially, when joining the College's pension scheme, employees will become a member of the College's Group Personal Pension Plan (GPP). For this Plan, known as Tier 1, the employee contributes 5% and the employer 3%.
After nine months' membership of the Tier 1 plan employees may opt to join Tier 2, which is also a Group Personal Pension Plan and the contributions are 5% from the employee and a 9% contribution from the College. Employees in Tier 1 automatically qualify for a Life Cover of 2 times salary. On entry to Tier 2 Life Cover changes to 4 times salary.
Enhanced Disclosure and other Pre-employment checks
Winchester College is committed to safeguarding the welfare of children at the school. Therefore, this appointment will be subject to a successful Enhanced Disclosure and Barring check. This will provide details of convictions, reprimands, warnings, cautions and bind overs as per the DBS filtering guidance.
